What to Eat Wednesday


So I've rebooted my blogs. Now what?

Obviously, I should post, but what to post?

After mulling over my quandary, and then talking to the husband about said quandary, he gave me some direction.

Don't just fly by the seat of your pants. You're a planner. Have a plan.

So then the brainstorming began, and after batting some ideas around, I'd like to welcome you to the very first What to Eat Wednesday!

The plan is to share recipes that I like, and that have been family-approved.

The approval may not be unanimous though. We do have a picky eater in the house. If he could, I think he'd try and survive off of PBJs and Mac 'N Cheese.

I am super excited to share the recipe for today. Its one of my favorites and is the 2nd best way to eat up the ricotta I made yesterday.

Its also a good way to use up fruit, jams, or jellies that you've got around the house.  So without further ado, here's my super customizable recipe for today.

Strawberry Ricotta Tartine

The dictionary definition for tartine is a fancy French open-faced sandwich topped with spreadable ingredients. 

That opens up a world of possibilities for this delightful little number, because there's really no way you can mess this up. 

My favorite version consists of strawberry preserves, almonds, and waffles. 

Strawberry Ricotta Tartine Ingredients & Equipment

Why waffles? Waffles don't upset my stomach before a run, and they're easy. They also fill me up better than just bread.

I don't really think I need to explain this dish, but I will.

Steps for Strawberry Ricotta Tartine

1. Toast waffles or bread, and spread ricotta on top.
2. Top with a dollop of jam, jelly, preserve, or fresh fruit of your choosing. 
3. Add additional toppings of your choice. 
4. Sprinkle some nutmeg, cinnamon, pumpkin pie spice, whatever you want on top as a finishing touch.
