Not too long ago, Mike walked into the house talking on his phone, and I heard him say this: "Oh, Dana would love to host your party". Well, Mike was right. He was talking to our good friend Wes, who is getting married to a wonderful girl named Hannah. The party in question was Wes and Hannah's Nashville bridal shower. Seeing as how the shower was scheduled for the Saturday after Thanksgiving, though, I wasn't really in the mood to do a lot of cooking. I didn't think I could buy enough pre-made stuff without spending a fortune, so amatuer super-event-planner Jennifer suggested croissants and chicken salad. Brilliant! Then I just needed a recipe. To Taste of Home!
Flock of Geese Chicken Salad
or The Most Wicked-Awesome Bridal Shower Chicken Salad Ever!!!
8 boneless skinless chicken breast halves (ab 2 lb), cooked and cubed
2 cup seedless red grapes, halved
2 cup salted cashews halves
2 celery ribs, sliced
3/4 cup mayonnaise
1/2 cup sour cream
1 Tbsp tarragon or white wine vinegar
In a large bowl, combine the first four ingredients; set aside. In a small bowl, combine mayonnaise, sour cream and vinegar; mix well. Pour over chicken mixture; toss to coat. Cover and refrigerate for at least 1 hour. Serve in a lettuce-lined bowl if desired. Yield: 12 servings.
Assembly is easy, especially when you use canned chicken. I used almond slivers instead of cashews because I like almonds. I also mixed some honey with the almonds because, hey, I like honey too.
So here's everything all laid out. Delicious!
We also had a cheese torte, meatballs, mini-tacos, and sweet potato bites. My chicken salad was best of all, of course.
The party went off so well. Everyone had a great time, and the food was heartily enjoyed. There's really nothing more I can say about this. Winner, winner, chicken...salad sandwich.
You sounded very relaxed about your services being offered....I might phone your husband next time I want a party thrown for me!!!!
